Not only great on Roastbeef - The Horseradish Mustard

Vegetable with a kick

We always like to add some mustard to our dishes. It is a great spice to notch up your dish. Easy to use, with so many varieties and it is healthy too.

Now it is zucchini time - an abundance of zucchini actually. We have the regular one in our garden as well as the "Flying Saucer". We love those. That is why I choose those for todays recipe. I cooked some grains, but rice or quinoa is great too for that dish.

In a pan, I heat up some sunflower oil, roast onions and the zucchini. Then I added a bit water and a teaspoon of tomato paste. Let it cook for a few minutes, and add one or two tomatoes and two teaspoon of Horseradish mustard - hot. We like a bit of spice, but medium will do the trick too. Adding the grain or rice and mix.

I let it simmer for a while. Seasoning with some salt and pepper, done!

We had a small piece of pork chop on the side which we had with our Red Onion BBQ Sauce. It was a very simple and easy lunch, but oh, so yummy.
