Peel the potatoes, wash them and cut them in smaller pieces. Cook them till they are done and discard the water. Add the butter, some milk and mash them with a potato masher.
When the potatoes are too thick, use more milk until they are nice and smooth. Add the mustard and salt if you like.
All done - quick and easy.
I made it as a vegetarian dish and had carrots and scrambled eggs with fresh chive.
