Now, this is very easy, very delicious and great finger food when entertaining.
Recipe is for 2 portions
Wash the potatoes (if you have small, new potatoes) and let them cook for 15 minutes. Let them cool down a bit and peel the potatoes. I made potato wedges because its not the time for new potatoes. - I peeled the potatoes first, cut them into wedges and then cooked them.
Cut the bacon into two pieces, spread them out on a board and spread the Volcano mustard on the bacon. Prepare a baking sheet with parchment paper and preheat the oven to 200°C.
When the potatoes are ready, take one and wrap the bacon around it. Place the potato on the baking sheet with the ends of the bacon facing down (try to do a better job than me)
When all potatoes are wrapped, drizzle some honey on top of the potatoes.
Back the potatoes in the oven for 15-20 min. till the bacon is crisp.
