For Potato wedges:
Preheat the oven to 200°C.
Wash and dry the salmon. Add the Canadian Maple Mustard on the salmon and brush it evenly on the meat.
Place the salmon on some parchment paper in a pan and close it loosely by folding the ends. Open the parchment paper in the last 10 minutes. This will prevent the mustard from burning.
Wash and peel the potatoes and cut it in wedges. In a bowl, add the olive oil and the mustard and some salt. Mix, and add the potato wedges. Mix the potatoes evenly in the marinade and transfer the potatoes on a baking sheet, covered with parchment paper.
The salmon need ca. 35 - 40 minutes. Add the potatoes after 10 - 15 minutes and let it bake for about 25 minutes.
We loved some fresh lettuce with some mustard dressing with the salmon.
