Pasta bowl with pumpkin and champignons

Micha cooked. That's right. He made this wonderful lunch for us today and because it is vegan, I like to share it now - because it is Veganuary!

Recipe for 2 Persons:

  • 250 gr Pasta
  • 150 Champignons
  • 300 Pumpkin (any pumpkin you have)
  • 5l Veggie broth
  • 100 ml Soy cream for cooking
  • 1 small onion
  • 1 clove of Garlic
  • 2 Tsp. of Roasted Onion mustard
  • Salt & Pepper
  • Some Thyme and Paprika powder

Boil the pasta in saltwater.

Meanwhile, cut the pumpkin, the champignons, in smaller pieces, mince the garlic and onion. Heat up some oil in a pan and roast the garlic, onion and the pumpkin in it. Add some of the broth and cover it up. Add broth when needed till the pumpkin is soft.

Now, add the champignons and let it cook for a while. Season with the Roasted Onion Mustard, salt & pepper, thyme and paprika. Add the soy cream last and let it cook for a minute.

Add the pasta and mix well. We had some lettuce with it. Delicious!
